I’m a plant based eater and for the most part my main concern has not been carbs or sugar just whether or not something I’m eating is a healthy whole food. But this low carb dessert is so easy and healthy.
This past year I lost 60 pounds eating plant based and counting calories. I love the beautiful colors of this gluten free breakfast cake recipe.
So I’ve decided to try Keto for a month or so. And see if it helps me drop those last unwanted pounds. I’m feeling pretty good so far. Especially eating low carb with fruit recipes.
So almond flour seems to be the low carb flour choice. It’s also gluten free. Almond flour consists of only ground blanched almond without any skin.
This low carb dessert is easy and gluten free
1/4 cup Almond flour contains only 6 grams of carbs compared to 16 grams in coconut flour. The same amount of Cake flour contains 22 grams of carbs. That’s why almond flour is best for this easy low carb dessert.
Almond Berry Bliss Bars Have blackberries and blueberries. Blackberries are high in vitamin C. Human beings cannot produce vitamin C on our own. It is essential for protein and collagen synthesis. They are great for low carb recipes with fruit.
Blueberries are a powerful antioxidant. Anthocyanin is a type of flavonoid. Flavonoids are naturally occurring plant pigments. These berries are so pretty in almond berry bliss bars.
It’s easy to eat low carb with fruit
Almond Berry Bliss Bars
About 5g carbs per square
- 2 Cups Almond flour
- 2 Tsp stevia Or sweetener of your choice
- 1 Tbsp Orange extract
- 2 Cups Mixed berries Any combination of blackberries blueberries and/or raspberries
- 3 Cups Almond milk
- 2 Tbsp Agar Or one 8.5 g sugar free jello any flavor but raspberry would work well- if you’re not vegan
For the berry topping
- 1 Cup Mixed berries Any combination of blackberries blueberries and/or raspberries
Preheat oven to 350
In a large mixing bowl combine all dry ingredients and whisk.
Add berries and extract and blend on low with electric mixer.
Add almond milk one cup at a time blending on low in between. Blend until thoroughly combined.
Line your baking pan with parchment paper (I used a square 9X9 pan)
bake for 25-28 minutes
chill for 20 minutes before adding fresh berries on top
