This yellow curry with tofu is my absolute favorite way to eat tofu. The Crunchy outside and firm inside is the best tofu nugget. These nuggets are oil free and made with a healthy coating of almond flour with curry spices and other seasoning. I love this breaded Tofu Avocado Curry Bowl. The soup is delicious because it has avocado in curry.
Almond flour has the least amount of carbohydrates of all flours. Therefore it’s Keto, gluten free, and plant based! Almond flour is made of ground blanched almond without any skin. It’s great for vegan main meal recipes like this.
The avocado in curry really makes this Indian soup flavor pop. Additionally almond flour coated these tofu nuggets well. It blends with spices and sticks to oil free tofu squares.
This avocado in curry recipe is special because it passes for so many different healthy diet qualifications! Qualifications such as Keto, paleo, vegan, pegan, gluten free, and whole food plant based! It’s hard to be on so many different diets at the same time!
One of the slices I used is Indian curry spice. Curry spice mix originated from India. The main spices are usually coriander, turmeric, cumin, fenugreek, and chili powder. It’s delicious for yellow curry with tofu.
Additional spices in yellow curry with tofu may include ginger, nutmeg, cinnamon, and black pepper. Curry spice is pretty healthy for you. One tablespoon of curry spice powder contains 20 calories, .8 grams of protein, and 2.1 grams of fiber.
Curry powder actually contains various health benefits. The Turmeric in curry is scientifically connected to reduced inflammation. That’s why yellow curry with tofu is so healthy.
Curry spice is said to fight against Alzheimer’s, benefit bone health, and boost metabolism. Furthermore It’s anti bacterial and heart healthy. I also like to put avocado in curry soup.
Tofu blocks come in a few different textures such as extra firm, firm, or soft. The softest tofu is labeled silken tofu. Tofu is very nutritious. It is rich in plant protein, calcium, and iron. That’s why this yellow curry with tofu is a healthy plant based protein.
Other ingredients include avocado, coconut milk, and nutritional yeast. Nutritional yeast is often fortified with vitamin B12 as well. You can add any vegetables in the curry broth you want! I like spinach, corn, and kale.
Start by making the tofu nuggets for yellow curry with tofu. Preheat the oven to 350 degrees F. Then combine spices and almond flour in a medium mixing bowl and whisk. Cut the tofu into 1X1 squares.
Toss each tofu nugget in seasoned flour and lay out on a baking tray lined with parchment paper. Bake them for approximately 20 minutes!

In a medium mixing bowl combine flour and seasoning and whisk.
Carefully cup open tofu container and pour liquid into separate bowl.
Spread tofu out on baking pan.
Bring blended avocado liquid to a simmer, add coconut milk and whisk. Add seasoning and whisk. Add any desired vegetables and simmer for 5-10 minutes.
