These gluten free vegan cashew butter cookies are basically just cashews and coconut flour. I also like to add a little zero calorie stevia for a sweeter taste. The second optional ingredient is butter flavored extract.
Just add 1/2 tsp of any vegan brand butter extract to the cashew butter. It makes these plant cookies taste like cake batter. However you can leave this out of cashew butter cookies. These cookies are the perfect simple meal plan recipe. You can pack them for breakfast, snack, or dessert.

Coconut flour isn’t like other types of flour. It’s made from straight coconut flesh. It’s low in carbs yet high in protein and fiber. You can substitute for almond flour in this healthy recipe if you prefer.

Add about one tbsp of water into the blender with cashews. Start to process or blend. Add extract if you are using any. Blend some more until smooth.
I had to scrape the sides a few times to get it perfect. Next, combine cashew butter and coconut flour in a large mixing bowl. Manually kneed and mash into recipe for cashew cookies dough.

Soak cashews in water a minimum of 4 hours
Drain them and keep the water (at least 1 tbsp of it)
Add cashews into a blender or food processor and blend
Add no more than 1 tbsp of water back in and blend again
Add butter flavor extract if using it and blend again until smooth
Preheat oven to 350 degrees
In a large mixing bowl combine cashew butter, coconut flour, and stevia (optional)
Manually kneed and mush up into dough.
Separate into 12 separate cookie dough balls
Spread out on baking tray lined with parchment paper
Use a spoon to mash each cookie ball flat
Optional* drop 4-5 dairy free chocolate chips on each cookie
Bake for 10-12 minutes
