  • 5 large ripe red tomatoes
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • 1/4 tsp salt
  • 1/4 tsp fresh black pepper
  • 8-10 cloves garlic, peeled
  • 1-2 oz freshly chopped parsley


  1. Preheat the oven to 200 degrees C (approx 390 degrees F) and line a baking tray with aluminum foil.

  2. Cut tomatoes into thick slices or large sections.

  3.  In a bowl, add olive oil, balsamic vinegar, salt, pepper powder, and whisk it well.

  4. Toss tomato and garlic in the marinade to coat the vegetables evenly.

  5. Place tomatoes and garlic on the prepared baking tray in a single layer.

  6. Roast tomatoes for about 10 minutes or until it starts to shrink and peel begins to shrink a bit.

  7. Garnish with parsley and serve!
