Easy Oatmeal Muffin Recipe Plant Based Breakfasts

This Easy Oatmeal Muffin Recipe is a healthy Plant Based Breakfast idea. It’s great for snacks and meal prep as well. Not only do I eat these oatmeal muffins with banana and chocolate chips, my kids gobble them up!

This easy whole food oatmeal muffins banana recipe turned out ridiculously easy to make. These ingredients actually started out as an attempt at oatmeal pancakes. Needless to say they didn’t work out. So they became muffins!

As pancakes these ingredients would not hold well enough to form a shape. However the same exact ingredients in a muffin pan and baked in the oven hold amazingly well. So this recipe turned into easy oatmeal muffins with banana.

This simple vegan oatmeal muffins banana recipe only requires 6 ingredients. Quick oats, peanut butter, and water. Also 1 large banana, dairy free chocolate chips or cocoa nibs. And your favorite sweetener equivalent to 1 cup granulated sugar.

Cocoa nibs and chocolate chips are similar in that they both come from the cocoa plant. However chocolate chips are actual candies and more processed. Cocoa nibs are just crushed cocoa beans. They taste great in easy oatmeal muffins with banana.

Therefore cocoa nibs are much healthier. However they don’t melt and are much more bitter than chocolate chip candies. The point is that you can use 1 cup of chocolate chips or cocoa nibs in this healthy oatmeal muffin recipe.

As I mentioned before, you can put any sweetener you prefer in the oatmeal recipe and the outcome will be similar. Either way you will end up with easy vegan muffins! My suggestion is to put the equivalent of 1 cup granulated sugar into this oatmeal muffins with chocolate chips.

What do I mean by that? Well you can simply put 1 cup granulated sugar. Other sweeteners equivalent to that include 1 cup coconut sugar, tsp stevia, or 3/4 cup agave. Check out this sugar conversion chart if you’re interested in more ratio information!

Start making easy vegan oatmeal muffins by Preheating your oven to 350 F. Then combine all oatmeal muffins with chocolate chips ingredients in a large mixing bowl. Blend with a hand held electric mixer. Allow batter to sit for about 30 minutes to allow oats to absorb some liquid.

Prepare muffin baking pan either by greasing or lining with paper cups (I sprayed mine with zero calorie non stick spray and did not use paper cups). Pour oatmeal batter into 9 cups for larger oatmeal muffins with chocolate chips or all 12 cups for smaller ones

Ingredients

  • 2 cups oatmeal quick oats
  • 1 Large Banana
  • 1/2 cup peanut butter
  • 3 cups water
  • 1 cup sugar or Any Amount sweetener of your choice equivalent to 1 cup granulated sugar (I used 1 tsp stevia)
  • 1 cup Dairy free dark chocolate chips for baking or 1 cup cocoa nibs for healthier option

Instructions

  1. Preheat oven to 350 degrees F

  2. Combine all ingredients in a large mixing bowl and blend with a hand held electric mixer

  3. Allow batter to sit for about 30 minutes to allow oats to absorb some liquid

  4. Prepare muffin baking pan either by greasing or lining with paper cups (I sprayed mine with zero calorie non stick spray and did not use paper cups)

  5. Pour oatmeal batter into 9 cups for larger muffins or all 12 cups for smaller ones

  6. Bake for 12 minutes
