Easy vegan blueberry muffins recipe is quick and easy to make. Blueberry mini muffins are delicious and fluffy. You can use this same recipe to make mini muffins or regular sized muffins. All that matters is the muffin pan you use.

The batter portion can be used for regular sized muffins or mini muffins in this vegan blueberry muffins recipe. Additionally, depending on the brand of pancake batter mix you choose, they can be gluten free as well.

My favorite thing about making vegan muffins with pancake mix is that it’s so simple. Due to the fact that pancake mix already has a lot of the necessary ingredients. For example, baking soda and a binding agent.

Vegan brands of pancake mix include Bisquick Original Pancake & Baking Mix, Aunt Jemima Original Pancake & Waffle Mix, or Hungry Jack Complete Chocolate Chip Pancake Mix.

vegan blueberry mini muffins

You only need 5 simple ingredients to make this vegan blueberry muffins recipe. All you need is 2 cups pancake mix (vegan brand such as Bisquick Original Pancake & Baking Mix, Aunt Jemima Original Pancake & Waffle Mix, or Hungry Jack Complete Chocolate Chip Pancake Mix). My favorite is Bisquick.

Ingredients also include 1 cup milk soy milk, almond milk, or plant based milk of your choice. Also 1/2 banana (soft), 1 cup blueberries, and 1 tsp vanilla extract. These blueberry

mini muffins are so easy to make also. That’s why I make them so often.

In a large mixing bowl combine pancake mix, plant based milk, 1/2 banana and vanilla extract and blend with hand held mixer until thoroughly combined. Add 1 cup fresh blueberries and fold with large mixing spoon until blueberries are evenly distributed.

Preheat the oven to 350 degrees F for the vegan blueberry muffins recipe. Grease 1 (24 count) mini muffin pans (regular muffin pan 12 count). Pour donut batter into donut compartments in the donut pan (fill them 3/4 way full). Bake blueberry mini muffins for 8 minutes only. The little bakes blueberries add a lovely pop of flavor to these mini muffins.
