Flourless Chocolate Chip Cookies Recipe

These flourless chocolate chip cookies are so healthy and delicious. They are healthy cookies with oatmeal and sweet potatoes and no processed flour. Gluten free chocolate chip cookies recipe is the best idea for breakfast, snacks, and dessert. I enjoy them as a late night snack instead of junk food.

Healthy cookies with oatmeal are my kids go to snack. They don’t know or care it’s a healthy, vegan, and plant based treat. All they know is that they get to eat cookies! They win and I win at the same time.

You only need 5 simple ingredients to make this gluten free chocolate chip cookies recipe. Ingredients include 1 cup quick oats oatmeal (dry), 1 cup sugar free dark chocolate chips for baking, and 2 cups cooked sweet potato. 

You also need 1 tsp vanilla extract  and 1 tbsp stevia optional. Additionally you will need a blender or food processor. Also you need a large baking sheet and possibly some parchment paper to make flourless chocolate chip cookies.

Healthy cookies with oatmeal are so easy to make

Start making gluten free chocolate chip cookies recipe by peeling and boiling your sweet potatoes until thoroughly cooked. 1 very large sweet potato or 2 medium/large sweet potato will be enough to equal 2 cups cooked sweet potato. 

Drain the sweet potatoes from the water and allow to cool off enough to touch. Then add oatmeal to the food processor and chop into “flour” (doesn’t have to be perfect flour). 

Add the cooked sweet potatoes, stevia, and vanilla extract to the food processor and blend until thoroughly combined. Move the gluten free chocolate chip cookie dough into a large mixing bowl and add the chocolate chips.

Mix and fold the chocolate chips into the cookie dough until thoroughly dispersed. Preheat the oven to 325 degrees F. Line a large baking sheet with parchment paper or grease it. Divide flourless chocolate chip cookie dough into 12 cookies. Bake healthy cookies with oatmeal for 20 minutes. These plant based cookies are great for a toddler snack too.

Allow healthy cookies with oatmeal to chill in the refrigerator for 20 minutes
