Healthy Banana Bread Cake With Chocolate Frosting

I love making healthy dessert with bananas. The flavors are so good especially with the peanut butter and cinnamon. 

What are all the ingredients for this recipe?

Ingredients (for the cake)

3 medium ripe bananas

1/3 cup peanut butter 

1/2 teaspoon baking soda

1/2 tsp baking powder 

1 pinch salt

1 cup monk fruit sugar

1 tbsp cinnamon 

1 tsp vanilla extract 

1.5 cups self rising flour 

Ingredients for the frosting 

1 cup pitted dates

1 cup almond milk unsweetened 

1 tbsp monk fruit sweetener 

2 tbsp cocoa powder

Especially with this chocolate frosting recipe. I use dates to sweeten it along with cocoa powder. The first thing I do is soak the dates in the almond milk in order to make them nice and soft before blending.

The next step is to blend the bananas in your food processor before adding in the peanut butter and other cake ingredients (not including the flour yet).

The next step in making this healthy dessert with bananas is to whisk the batter with the flour in a large mixing bowl. Then preheat the oven to 375 degrees F before greasing the standard medium cake pan. Pour the batter in and bake it for 20 minutes.

Diabetic recipes for desserts like this cake have the most delicious frosting made with dates. Drain the dates from the almond milk and blend them alone first before pouring the almond milk back in. Then blend in the cocoa powder and monk fruit sweetener. Continue to blend until the frosting is as smooth as possible! 

Chill the cake for one hour and the frosting for 20-30 minutes. Then you’re ready to frost the cake and serve.

Ingredients

For The Cake

  • 1.5 cups self rising flour
  • 3 very ripe bananas
  • 1 cup monk fruit sweetener for baking
  • 1 tbsp cinnamon
  • 1 Tsp vanilla extract
  • 3 tbsp peanut butter
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt

For The Frosting

  • 1 cup dates pitted
  • 1 cup almond milk Unsweetened
  • 2 tbsp cocoa powder Unsweetened
  • 1 tbsp Monk fruit sweetener

Instructions

  1. Start by soaking the dates in the almond milk and set aside 

  2. Blend the bananas in your food processor first

  3. Once it’s smooth add 1/3 cup peanut butter 1/2 teaspoon baking soda 1/2 tsp baking powder 1 pinch salt 1 cup monk fruit sugar 1 tbsp cinnamon and 1 tsp vanilla extract into the food processor as well and blend until smooth 

  4. Pour into a large mixing bowl and whisk in the flour 

  5. Preheat oven to 375 degrees F, Grease or line a standard cake pan (medium sized) pour the batter in and smooth the top) 

  6. Bake for 20 minutes allow it to rest for 30 minutes then chill for 1 hour 

  7. Strain the dates and blend them alone first 

  8. Pour the almond milk back in and blend.

  9. Blend in the cocoa powder and monk fruit sweetener, chill the frosting for 20-30 minutes 

  10. Once the cake and frosting is chill frost the cake and serve!
