Dates are little fruits that grow on trees. They taste like chewy candies and are a great vegan dessert ingredient. They can come soft or dry, Seed in or pitted.
We are using canned coconut milk for this vegan ice cream recipe but we only want the cream. It’s super easy to get the cream to separate from the clear liquid.
All you need to do is chill the unopened can in the refrigerator for at least one hour, maybe even two just to make sure. The cream and liquid will separate from each other. And the cream will be at the top.
Just open the can and use a large spoon to scoop the thick white creamy paste out and discard the clear liquid at the bottom. This healthy vegan blueberry ice cream requires only 5 ingredients! My kids and I love eating this nice cream recipe in the summer. The fruit and dried dates are healthy for them as well!
