Blueberries are low in calories especially for a fruit. It’s also one of the lowest carbohydrate fruits. This is beneficial for people on low carb diets!

They are packed with vitamins and minerals. Blueberries are rich in fiber, protein, vitamin A, and a variety of B vitamins. Also they contain vitamin C, E, and K. Blueberries also provide calcium, iron, magnesium, and zinc!

Have you ever tried soaked dates before? I often just use maple syrup or agave but I was turned on to soaked dates recently. And it’s a great alternative.

  1. What Is Nice Cream Made Of?

    Nice cream is vegan ice cream treat made with fruit, often bananas.

Dates are a delicious plant based ingredient for any dessert.

Soaked Dates Have Antibacterial Compounds That Are More Effective Than Honey. When puréed It becomes thick, dark brown and super-sweet. Dates are commonly used in middle eastern cooking and desserts. 

Dates are little fruits that grow on trees. They taste like chewy candies and are a great vegan dessert ingredient. They can come soft or dry, Seed in or pitted.

We are using canned coconut milk for this vegan ice cream recipe but we only want the cream. It’s super easy to get the cream to separate from the clear liquid.

All you need to do is chill the unopened can in the refrigerator for at least one hour, maybe even two just to make sure. The cream and liquid will separate from each other. And the cream will be at the top.

Just open the can and use a large spoon to scoop the thick white creamy paste out and discard the clear liquid at the bottom. This healthy vegan blueberry ice cream requires only 5 ingredients! My kids and I love eating this nice cream recipe in the summer. The fruit and dried dates are healthy for them as well!

  • 4 Cups Blueberries Frozen
  • 2 Tbsp Crushed pistachios Or nuts of your choice for garnish
  • 1/2 Cups Dates
  • 2/3 Cup Water
  • 1 Can Coconut milk full fat chill until clear liquid separates from coconut cream. Cream will be at the top. Scoop out with large spoon


  1. Chill your canned coconut milk in the refrigerator for 2 or more hours
  2. Soak your dates in the water for 1-2 hours at room temperature. Then drain right before blending
  3. open the can and use a large spoon to scoop the thick white creamy paste out and discard the clear liquid at the bottom. 
  4. Combine soaked dates and coconut cream in a blender and blend
  5. Lastly add frozen blueberries and blend

  6. If it starts to get liquify just put in freezer for an hour or so
