I love this recipe for healthy quinoa sushi roll. It’s super healthy, filling, and delicious. These vegan sushi rolls are so easy to make, you don’t have to have special equipment or any experience to make them. This healthy quinoa recipe is one of my favorite plant based meals.
Vegan sushi rolls are so much fun to make. I have always loved sushi and the great thing is you don’t need any seafood. Wasabi, soy sauce, and seaweed are some of my favorite flavors. Additionally substituting quinoa for rice is so healthy.
This healthy quinoa recipe is great for over all health and even weight loss. Quinoa is gluten-free, rich in protein and other essential vitamins and minerals. It is also high in fiber, magnesium, B vitamins, and iron.
This vegan sushi recipe also contains potassium, calcium, phosphorus, vitamin E and various beneficial antioxidants. It’s also so simple to make. You only need a few simple ingredients to make it. This vegan sushi roll is plant based and gluten free!
All you need to make this healthy quinoa recipe is 1/4 cup quinoa dry, 1/2 cup water (to cook the quinoa), and 1 medium carrot stick. Also 1 small cucumber, 1/4 cup avocado, and 1 tbsp wasabi.
Other ingredients for these vegan sushi rolls include 1/2 tbsp rice vinegar and 2 full sized seaweed sheets (nori). They are so easy to make as well. First, bring 1/2 cup water to a boil then reduce heat to medium/high.
Then add the quinoa to the water and cook for 12 minutes. Make sure to stir with a large spoon every 5 minutes or so. Remove heat and set quinoa aside while prepping the rest of healthy quinoa sushi roll recipe.
In a medium mixing bowl combine wasabi and rice vinegar and whisk until thoroughly combined. Add the cooked quinoa to the wasabi mixture and mix with a large spoon until thoroughly combined. Cut the carrot and cucumber into 4 sections each vertically.
Lay down a sheet of seaweed vertically on a sushi mat or hand towel. For the hand towel, fold it in half lengthwise and over it with plastic wrap. Use half the quinoa to fill one roll. Make a flat layer of quinoa on the seaweed like a sheet over a mattress.
If you want the quinoa on the outside of your vegan sushi recipe, flip the seaweed over at this point. Put half the portion of carrots, cucumber, and avocado on the closest edge of the seaweed to you. Then roll healthy quinoa sushi roll up using the towel to guide the process.
