They are super nutritious and delicious especially sautéed with some of your favorite spices. Sweet potatoes are packed with vitamins and minerals which makes them great for vegan dishes like this one.
How do you make sweet potatoes noodles? Sweet potatoes one of the easiest vegetables for spirilizing! First make sure you rinse them thoroughly before peeling off the skin. You might even want to rinse again afterwards.
- Spiralize with the spaghetti blade (fine blade or 1/8-inch).
- Make long flat noodles with a vegetable peeler like lasagna.
- Use a mandoline or a V-slicer fitted with an 1/8-inch julienne attachment.
What ingredients do you need to make this recipe for sweet potato noodles?
- 4 cups of spirilized sweet potatoes (4-5 medium sweet potatoes)
- 1 tbsp olive oil
- 2 tsp salt
- 1 tsp black garlic powder
- 1 tsp pepper
- 2 tbsp nutritional Yeast
- 1 tsp red chili flakes
- 1 oz fresh cilantro

How do you make this vegan vegetable noodle dish?
Heat your skillet on medium high with olive oil.

Once it’s nice and hot toss in the sweet potato noodles and sprinkle with the salt. Toss them around a few times and sauté for 1 minute then sprinkle in the rest of your spices.

Sauté for another 2 minutes before removing the heat.
Pro tip for these vegetable noodles: sweet potato is not like zucchini, they will become mushy if over cooked or cooked in sauce. It’s important to sear them in oil with salt and not over cook them!

I LOVE making these vegetable noodles for meal prep so I prefer storing them in person portion sized containers. However you can store them in any seal tight container or bowl with plastic wrap.
How do you reheat this dish?
I love eating them cold right from the refrigerator. However you can simply toss back in your skillet on medium heat for 5 minutes or microwave for 1-2 minutes.
