Healthy Vegan Custard Tarte Recipe

There is no processed sugar or added sugar in this Healthy Vegan Custard Tarte Recipe. However fruit contains natural sugar. Natural sugar processes slower through your body which is best for blood sugar and cravings.

Ever since I started making vegan recipes I’ve had two categories. Whole food plant based recipes and vegan comfort food type recipes.

I always put desserts in the comfort food category. Every time I would post a new dessert recipe I would hear the same few criticisms such as “too much sugar, too much oil, that’s so unhealthy!” So made this vegan fruit tart.

And I always thought, well duh it’s a cake! Of course it’s fattening it’s frosting or fudge! But then I sat back and realized I was being closed minded thinking desserts can’t be healthy. So I started researching different ideas of healthier dessert options online. Like this vegan fruit tart.

I had bananas and mangos already in the fridge. I also had Agar (vegetable gelatin) and Bobs Red Mill Egg Replacer (wheat gluten mixture).

Fruit is nature’s candy so of course I should incorporate fruit

What is Agar Agar? Agar Agar comes in powdered form that forms a jelly like substance. This vegetable gelatin comes from red algea coming from seaweed. It’s great for vegan fruit tart.

This ingredient adds a fluffy bouncy texture. It also helps to hold your vegan fruit tart.

There are many Egg Replacer options available however I prefer Bobs Red Mill Egg Replacer. It is a mixture of Whole Soy Flour, Wheat Gluten, Corn Syrup Solids, Algin. Add one tablespoon Egg Replacer to three tablespoons water for each one whole egg in any vegan fruit tarte recipe!

The blackberry is not botanically classified as a fruit. It is an aggregate fruit containing small drupelets.  Blackberries are a high ranking antioxidant strength nutritional fruit. I love vegan desserts with fruit.

Blackberries are high in vitamin C. Human beings cannot produce vitamin C on our own. It is essential for protein and collagen synthesis. Vitamin C is also essential for some neurotransmitters. Other benefits include immune system support and wound healing.

This recipe is fruity and fun.

Healthy Vegan Fruit Tarte Recipe

I made two separate fruit flavored layers but you don’t have to do that. However I’m writing the recipe out for two layers.

Ingredients

  • 2 Mangos
  • 3 Bananas
  • 1/2 Cup Blueberries
  • 1/2 Cup Blackberries
  • 2 Cups Soy milk
  • 2 Tbsp Agar Agar Can use unsweetened jello if you’re not vegan
  • 4 Tbsp Bobs Red Mill Egg Replacer Wheat gluten mixture

Instructions

For The First Layer

  1. combine 1 mango, 2 bananas, and 1 cup soy milk in blender or food processor and blend. Add 1 tbsp Agar, 2 tbsp egg Replacer and 2 packets stevia (optional) and whisk until thoroughly combined.

  2. Boil on medium for at least 5 whole minutes (to activate Agar gelatin)

  3. Line a square pan with parchment and pour first layer. Set aside in fridge to harden slightly while preparing second layer.

For The Second Layer

  1. combine 1 mango, 1 banana, blueberries, blackberries and 1 cup soy milk in blender or food processor and blend. Add 1 tbsp Agar, 2 tbsp egg Replacer, and 2 packets stevia (optional) and whisk until thoroughly combined.

  2. Boil on medium for at least 5 whole minutes (to activate Agar gelatin)

  3. allow to set for 5 minutes

  4. pour on top of chilled first layer

  5. If you don’t care about making two separate layers just combine all ingredients, blend, boil, and set aside in refrigerator.
