Put your knives away, because you don’t need them! All of these healthy vegan recipes require no chopping. So, the ingredients are used whole, making these recipes easy to throw together.
There is still some prep work involved. You may need to scoop your avocado or wash your berries. But, I find that I save a ton of time by skipping the process of chopping veggies.
Another way around this? Chop your veggies in advance. Instead of full on meal-prepping, you can chop your onions and peppers at the beginning of the week and use them as you need them. Frozen chopped veggies are also a great way to save time.
