Peanut butter and chocolate collide in this homemade crunchy protein bar recipe. Skip the store-bought protein bars and use a few ingredients in your pantry to make these peanut butter chocolate bars. It’s like a healthier version of a classic Crunch chocolate bar!

You will use vegan chocolate chips, protein powder, peanut butter, maple syrup, crispy cereal, and a little coconut oil to create these delicious treats. This homemade protein bar recipe is great to make and keep on hand for when you get to craving for a sweet treat that is also full of protein.

  • Vegan Chocolate Chips: You will use your favorite flavor of chocolate chips. Milk chocolate, semi-sweet, etc. I like using dark chocolate but you can mix it up depending on the flavor you would like.
  • Protein Powder: I used a vanilla protein powder for the protein mix in these high-protein snack bars. Any brand works great. I prefer to use a vegan protein powder. 
  • Peanut Butter: Reach for peanut butter or your favorite nut butter to use for the peanut butter mixture of the bars. I have done cashew butter, almond butter, etc. 
  • Maple Syrup:  Instead of artificial sweeteners I prefer to use maple syrup. 
  • Coconut Oil:  A little bit of coconut oil is used to help create the proper texture for these crunchy bars. 
  • Crispy Cereal: The cereal is going to add a nice crunch to the bars. It is the perfect ingredient to create that satisfying crunch factor. 

How to make homemade crunchy protein bars:

Start by lining your baking dish with some parchment paper. 

Then in a medium bowl, you will add your chocolate chips, protein powder, peanut butter, syrup, and oil. Mix to combine. 

Next, you will microwave the mixture at 30-second intervals. Then stir to combine the ingredients. Repeat the heat cycles, and stir between. You will want to have the melted chocolate mixture fully mixed. 

Then in a separate bowl, you will add your cereal. I used a large mixing bowl to make it easy to stir. Pour the chocolate mixture into the cereal and mix it well to ensure it is fully combined. 

Pour it into the pan, and then spread evenly. Refrigerate the bars for around an hour to firm up. 

Once firm, remove from the pan and slice into bars.

Storage and serving:

You can store your bars in an airtight container in the fridge for up to two weeks. 

Or, if you would like you can freeze for up to 6 months. Just make sure to use a piece of parchment paper in between layers if you plan to stack. This will prevent the bars from sticking. 

Recipe FAQs and Tips:

  • If you use a different type of peanut butter like natural peanut butter, sunflower butter or another type just know you might have to add more or less dry ingredients to create the perfect bars. 
  • It is important to allow your crunchy peanut butter bars to be fully set up before you try to slice them. If you eat them before they are set you will find the bars fall apart. 
  • Feel free to experiment with mix-in ingredients to alter flavor. You can add in your favorite candy, some extra oats for a chewy texture, or even melt some dark chocolate chips, and drizzle chocolate on the top of the bars. A chocolate drizzle adds more sweetness to the top. 

How can I make my bars sweeter without adding more sugar?

You can use chopped dates, or other dried fruit to help sweeten up the bars without any extra sugar.

Feel free to reach for certified gluten-free ingredients to make the bars. This recipe is versatile with the ingredients you choose.

These homemade protein bars are perfectly crunchy and sweet.

  • 1 ½ cups vegan chocolate chips
  • ½ cup vanilla protein powder
  • 1 cup peanut butter
  • ½ cup maple syrup
  • ¼ cup coconut oil
  • 3 cups crispy rice cereal


  • Line a 9 x 13 inch baking dish with parchment paper.
  • In a medium sized bowl, add the chocolate chips, protein powder, peanut butter, syrup and coconut oil. Mix together and microwave at 30-second intervals.

  • Stir between each interval till the ingredients are all melted together. Be careful not to overcook.

  • In a large bowl, add the crispy rice cereal. Then, pour the chocolate mixture in and mix until all the cereal is coated with the chocolate mixture.

  • Pour the mixture into the lined baking dish and spread it out evenly in the dish.
  • Refrigerate until firm, about 1 hour. Remove and cut into bars.

●  With plant based protein, You may need slightly more oil since plant based protein powders tend to absorb more liquid.
● Store in the refrigerator for up to 2 weeks or freeze for up to 6 month

    1. It really depends on the protein powder used and the size of the bar you cut! If I cut these into small bars for a snack I get about 6 grams of protein in each. I would calculate depending on the type of powder you use. Hope this helps 🙂
