I am not exaggerating when I tell you this is the best vegan chocolate pudding I’ve ever had. It’s incredibly rich, velvety smooth, and full of chocolatey flavor. The secret ingredient? coconut milk!

I have made different variations of chocolate vegan pudding over the years. Some recipes use other non-dairy milk options as a base or even silken tofu, but they never come out as smooth as this one. This is an easy vegan chocolate pudding that I’m sure you’ll want to make again and again.

This is also a small batch recipe, perfect for two people. But, you can easily scale the recipe up for more servings. And, I have done this many times.

This recipe is thicker than a vegan chocolate mousse. It’s a rich and decadent dessert.

Ingredients needed

This recipe is made with simple ingredients you may even have on hand. You can find any of these ingredients at your local grocery store.

  • 1 cup full-fat coconut milk – I have made this recipe with light coconut milk before as well. While it is tasty, it is not as rich or thick. I suggest making it with full fat coconut milk if possible.
  • 4 Tbsp. unsweetened cocoa powder – This is where all the chocolatey flavor comes from in this creamy vegan chocolate pudding.
  • 2 Tbsp. corn starch – Corn starch helps to thicken the base of this pudding.
  • 3 Tbsp. granulated sugar – You can use white sugar or coconut sugar in this recipe. It is required to make the pudding sweet and I would not leave this ingredient out. I like to use organic cane sugar.
  • ½ tsp vanilla extract – A small amount of vanilla extract is all you need to help balance the flavor of this pudding. The vanilla flavor does not come through.

How to make this homemade vegan chocolate pudding

In a saucepan over medium-low heat, combine coconut milk with vanilla extract. Heat until it just warm, stirring occasionally.

In a bowl, combine dry ingredients. Mix together cocoa powder, corn starch and sugar. Whisk until no lumps remain.

Slowly incorporate dry ingredient mixture into the pot with the coconut milk. On medium heat, whisk the mixture constantly until it thickens. This will take about 5 minutes. The mixture will also thicken as it cools. For best results, be sure to continuously stir the mixture on the stovetop.

Cover with plastic wrap and place in the fridge for at least 1 hour.

Variations and mix-ins

  • Dairy-free chocolate chips – For extra crunch, mix in some dairy-free chocolate chips before the mixture is completely cooled. Or, add them on top.
  • Salt – a pinch of flaky sea salt on top of the pudding goes a long way in this recipe.
  • Nuts – If you’re a fan of nutty flavors in your pudding, try adding chopped nuts on top of the pudding after it sets. Or, mix in a spoonful of peanut butter.
  • Instant coffee – Add a tablespoon of instant coffee to make a mocha chocolate pudding.

Storage

This pudding doesn’t last long in our house because we usually eat it up right away. Sometimes, I make it the night before to enjoy the following day. Store in an airtight container in the fridge for up to 2 days.

  • Whisk continuously until mixture thickens significantly, about 5 minutes.
  • Divide into serving dishes, cover and place in fridge to chill for at least 1 hour.
  • Serve with fresh fruit, nuts, whip cream, coconut or flaked sea salt.
