Homemade Vegan Granola Recipe (No Refined Sugar)

I’m always shocked when I see the prices for store-bought granolas at the market. It’s incredibly easy to make, and you can customize it so many different ways. This homemade granola recipe is free of refined sugar, sweetened with maple syrup.

You can also customize this recipe and leave the maple syrup out of you’re looking for a completely sugar-free granola.

For this recipe, I chose warming fall spices. This tasty granola is perfect on vegan yogurt, or just bringing with you to snack on the go. I love the crunchy clusters and always make a large batch if I have a busy week ahead.

Ingredients needed

  • 3 ½ cups rolled oats – old fashioned rolled oats are the best kind for this granola.
  • ¾ cups walnuts, coarsely chopped – you can use any type of nut you’d like, but I love the way walnuts taste in granola. They add so much hearty texture and make the recipe more filling.
  • ¾ cups raw pumpkin seeds – If you don’t like pumpkin seeds, you can also use sunflower seeds.
  • 1/3 cup coconut oil – Coconut oil helps the granola stick together and form clusters.
  • ½ tsp salt
  • 4 ½ tsp pumpkin pie spice – Pumpkin pie spice is the perfect blend for this fall granola. But, you can also mix up your own blend with cinnamon, ginger, clove, and other spices.
  • ¾ cups dried cranberries – Dried fruit is added at the end after baking. You can also use blueberries or dried cherries.
  • 1/2 cup maple syrup (optional) -If you are only avoiding refined sugar, mix the maple syrup in with the coconut oil. It also helps the granola brown up and form clusters. You can use less or leave it out completely for less sugar.

How to make homemade vegan granola

Preheat oven to 300°F. Line a baking sheet with parchment paper. You can also use a silicone baking mat.

In a large mixing bowl, combine rolled oats, chopped nuts and pumpkin seeds. Stir.

In a saucepan, heat coconut oil and maple syrup, mixing together till oil is melted. Remove from heat and stir in spices and salt.

Pour the oil mixture over the dry ingredients and stir till coated.

Spread onto prepared baking sheet in an even layer and bake for 30-40 minutes till golden brown. There is no need to stir.

Remove from oven and allow to cool completely without disrupting the mixture. The less the mixture moves while baking and cooling, the more clusters will form.

Sprinkle the cranberries over the mixture and break the granola into pieces.

Store in an airtight container at room temperature for up to 10 days.

Recipe tips and variations

  • Do not skip the step of lining your baking sheet. This recipe can get sticky and messy, so it helps tremendously with cleanup.
  • Dried fruit adds a natural sweetness that balances out the warming spices.
