A few days after posting my first vegan frosting recipe I realized people were loving it! So that’s why I have continued to make different vegan buttercream recipes like Vegan mint chip frosting. This Mint Chocolate Chip Buttercream is the 15th recipe so far!
Vegan buttercream frosting recipes are one of my first recipes to be super popular. I had made a vegan marshmallow buttercream frosting for my sons birthday cake and decided to make a recipe post because it was so easy and tasted delicious.
This vegan mint Chocolate Chip Buttercream frosting recipe only required 5 simple ingredients, 4 if you don’t use the food coloring to make it green. But the green color is the funnest part!
All you need for this vegan frosting is vegetable shortening, powdered sugar, mint extract, cacao nibs (or chocolate chips), and green food coloring.
Vegetable shortening is also known by its brand name Crisco. Crisco provides two types of shortening. The first is regular shortening which is neither vegan nor vegetarian. Due to the fact it comes from animal fats. Vegetable shortening is best for Vegan mint chip frosting.
However vegetable shortening is made from hydrogenated vegetable oil. Neither is necessarily “healthy” lol. However this is full flavored vegan Mint Chocolate Chip Buttercream recipe!
Cacao Nibs are similar to chocolate chips. Because they are also made from the cocoa plant. You can easily replace the cacao nibs with dairy free chocolate chips. Cocoa nibs are perfect for Vegan mint chip frosting.
However I find it harder to frost cakes with larger chocolate chip chunks. Cacao nibs are smaller and easier to use for piping and cake decoration.
Cacao nibs are actually crushed pieces of the cacao bean. Cacao nibs are packed with nutrients and powerful plant compounds. They provide protein, fiber, and iron. As well as magnesium, zinc, and manganese. I love them in Vegan chocolate frosting.
Cacao nibs are healthier than chocolate chips and still providing chocolatey flavor! They’re super tasty in vegan mint frosting.
Instructions for this mint chip vegan frosting are simple! Start with your electric mixer and vegetable shortening. Mix up shortening first.
Add mint extract, food coloring, and mix. Next start adding the powdered sugar. Mix one cup at a time to avoid a big Vegan frosting mess!
I learned that lesson the hard way! The first attempt at making frosting I added all the sugar at one time. Powdered sugar went everywhere. Mint chocolate chip buttercream frosting is so easy and delicious.
This vegan frosting is easy and delicious
In a large mixing bowl add vegetable shortening, mint extract, and food coloring
Use electric mixer to break up shortening, extract, and coloring
Add powdered sugar one cup at a time blending in between to avoid powder sugar explosion
Blend until thoroughly combined
Add cacao nibs (or chocolate chips) and blend again until thoroughly combined
