Oil Free Vegan Donut Recipe With Rainbow Coating

This oil free vegan donut recipe is easy and so much fun. They are healthy, delicious, and such a lovely color! Rainbow donuts are oven baked and the kids love them. Additionally they are good for you, Gluten free, and simple.

The beautiful rainbow color of the oil free vegan donut coating is made with an accidentally vegan cereal. Captain crunch cereal with berries is vegan. Therefore the “Oops All Berries” Captain Crunch cereal is totally vegan also. This cereal is great for decorating vegan dessert recipes.

It’s perfect for healthy oil free donuts. Furthermore I used my Zulay Kitchen nonstick donut pan therefor no oil was needed. These vegan donuts slip right out when done chilling. I love this donut pan actually.

These gluten free rainbow plant based donuts only need 6 ingredients. All you need for the donuts is, 1 cup cashew butter, 1 cup almond flour and 16 oz dried dates (pitted). 

A helpful tip for perfect oil free donuts is to get non pitted dates. Then manually remove the pits yourself because pre pitted dates are a lot more dry. You also need 1/3 cup vegan milk (such as soy or almond) for these plant based oven baked donuts.

The vegan rainbow coating only needs 2 ingredients.

Rainbow vegan donuts

Ingredients include 6oz of “Oops All Berries” Captain  crunch cereal (you only need 1/2 of an 11.5 oz box). 1 cup dairy free dark chocolate chips for baking. The directions to make plant based oven baked donuts are so easy also.

First preheat your oven to 350 degrees F. Using a food processor or blender process 1/2 the box of caption crunch “all berries” cereal into “flour” put in a large mixing bowl and set aside to coat the gluten free donuts later.

Using the food processor or blender process/ blend up the dates and set them aside. In a separate large mixing bowl combine cashew butter and stevia. Beat with an electric mixer until thoroughly combined into vegan donut batter.

Add the almond flour to the plant based donut batter and beat again until thoroughly combined. Then add vegan milk and beat again until thoroughly combined. Add the blended dates to the oil free donut mixture and beat again with electric mixer until thoroughly combined. 

Use a large mixing spoon to pour vegan donut batter into the donut pan. Bake the donuts for only 7-8 minutes. Allow donuts to completely cool off by chilling them in the refrigerator.

Melt the dairy free chocolate chips for baking in the microwave. Use a microwave safe bowl and heat 40 seconds at a time. Stir in between heating the chocolate to avoid burning the chocolate.

Dip the oil free healthy donut tops first in melted chocolate then immediately into the Captain Crunch “All Berries” cereal “flour.” These Gluten free oven baked treats are ready to serve!

Store healthy rainbow donuts on parchment paper and store in the refrigerator

Ingredients

For The Donuts

  • 1 Cup Cashew Butter
  • 1 Cup Almond flour
  • 16 Oz Dried pitted dates

    *helpful tip get non pitted dates and manually remove the pits because the pre pitted ones are very dry.

  • 1 tbsp Stevia
  • Cup Vegan milk Such as soy milk or almond milk

For The Rainbow Coating

  • 6 Oz Captain Crunch Cereal “Oops All Berries” If you get an 11.5 oz box you can use half the box
  • 1 Cup Dairy free chocolate chips for baking

Instructions

For The Donuts

  1. Preheat oven to 350 degrees F 

  2. Using the food processor or blender process/ blend up the dates and set them aside

  3. In a separate large mixing bowl combine cashew butter and stevia. Beat with an electric mixer until thoroughly combined 

  4. Add the almond flour and beat again until thoroughly combined 

  5. Add vegan milk and beat again until thoroughly combined 

  6. Add the blended dates to the mixture and beat again with electric mixer until thoroughly combined 

  7. Use a large mixing spoon to pour vegan donut batter into the donut pan

  8. Bake for 7 minutes only

  9. Allow to completely cool off by chilling in the refrigerator for 30 minutes before removing from pan and coating with the rainbow topping

For The Rainbow Topping

  1. Using a food processor or blender process the caption crunch “all berries” cereal into “flour” and put in a large mixing bowl

  2. Melt the dairy free chocolate chips for baking in the microwave (use a microwave safe bowl) heat 40 seconds at a time, stirring in between to avoid burning the chocolate 

  3. Dip the top side of the donuts first in melted chocolate then immediately into the Captain Crunch “All Berries” cereal “flour”

  4. Donuts are now ready to serve!

  5. Store them on parchment paper and store in the refrigerator
