I made these quinoa soft shell tacos and used them for meal prep for about 4 days. Quinoa only takes about 12 minutes to cook up in a pot. This plant based ingredient is packed with protein, vitamins, and minerals. They’re a healthy superfood.
Vegan tacos with quinoa, avocado sauce, and whole wheat tortillas are completely whole food plant based. They are lower in calories, gluten free, and superfood healthy.
Quinoa is a plant based complete protein. It’s also rich in fiber, magnesium, B vitamins, iron, potassium, calcium, phosphorus, vitamin E and various beneficial antioxidants. Quinoa is a perfect plant based ingredient for healthy vegan quinoa taco recipes.
You only need easy healthy ingredients for plant based tacos. For the quinoa tacos all you need is 2 cups quinoa dry and 4 cups water (for cooking quinoa). You also need 2 cups shredded cabbage purple, 1 tbsp salt, or more to taste.
Seasoning for the quinoa tacos also include 1 tbsp pepper and 1 tbsp onion powder. You also need 5 whole wheat tortillas. Use medium tortillas for soft tacos and large tortillas for burritos. The plant based avocado taco dressing sauce is so simple also.
For The Avocado Dressing you need 1 medium Avocado, 1 tbsp olive oil, or vegetable broth for olive oil. Also 3 tbsp almond milk, 1 tbsp nutritional yeast (optional), and 1 tbsp onion powder. Seasoning for the avocado taco sauce recipe also include 1 tbsp garlic powder, 1 tsp salt, and 1 tsp pepper. Nutritional yeast is often fortified with vitamin B12.
You will end up with about 4 cups cooked quinoa. Add 1 tbsp salt (or more to taste) 1 tbsp pepper and 1 tbsp onion powder and stir quinoa again. Set the cooked quinoa aside while preparing avocado taco dressing sauce.
I also like to heat up the tortillas for these quinoa tacos in a frying pan to make them a little crispy. Making vegan avocado taco sauce is so easy too.
For the vegan tacos recipe avocado dressing sauce take one medium to large avocado in a medium mixing bowl and mush up with a fork.
Then add 1 tbsp nutritional yeast (optional) 1 tbsp onion powder, 1 tbsp garlic powder, 1 tsp salt, and 1 tsp pepper and mush up with the fork again. Next add the olive oil (or vegetable broth).
Use a whisk to mix and blend vegan taco sauce recipe until thoroughly combined. Lastly add almond milk to the avocado quinoa taco sauce and whisk again until thoroughly combined.
With avocado dressing sauce
Take one medium to large avocado in a medium mixing bowl and mush up with a fork
Add 1 tbsp nutritional yeast (optional) 1 tbsp onion powder, 1 tbsp garlic powder, 1 tsp salt, and 1 tsp pepper and mush up with the fork again
Then add the olive oil (or vegetable broth) and use a whisk to mix and blend until thoroughly combined
Lastly add the almond milk to the avocado sauce and whisk again until thoroughly combined
For The Quinoa bring 4 cups water to a boil. Add 2 cups quinoa to the pot and lower heat to a simmer. Stir periodically.
Cook for 12-15 minutes. You will end up with about 4 cups cooked quinoa.
Add 1 tbsp salt (or more to taste) 1 tbsp pepper and 1 tbsp onion powder and stir again
I also like to heat up the tortillas in a frying pan to make them a little crispy
Scoop quinoa evenly into 5 whole wheat tortillas, add shredded cabbage and top with avocado taco sauce
