Quinoa Avocado Veggie Patty Recipe

This quinoa avocado veggie patty recipe is whole food plant based. It’s gluten free, vegan, and oven baked. This veggie patty recipe is simple and packed with vegetables and whole grains. It’s makes the perfect vegan burger or sandwich. 

Quinoa is healthy and delicious that’s why I love these veggie patties. It is gluten-free, high in protein and one of the few plant foods that’s also a complete protein. Complete proteins are foods that contain all 9 essential amino acids the body can’t produce on its own. 

I made these quinoa avocado veggie patty burgers today for lunch. My son ate one on white bread with mayo and ketchup. I put mine on a bagel with avocado and vegan mayo. 

Other health benefits of Quinoa include being rich in fiber, magnesium, B vitamins, iron, potassium, calcium, phosphorus, vitamin E and various beneficial antioxidants.

You only need a few healthy ingredients to make this quinoa avocado veggie patty recipe. The ingredients include 1 cup quinoa dry, 2 cups water (for cooking quinoa), and I cup shredded carrots. Also 1/4 cup avocado, 1/4 cup melted vegan butter or vegetable broth.

Other quinoa veggie patty ingredients include 1 cup almond flour, 2 tsp salt, 1 tsp pepper, and 1 tsp onion powder. Additionally this quinoa recipe is so easy to make. Start by cooking the quinoa in the water. Use a medium to large cooking pot – Bring to a boil, then lower heat and simmer, uncovered for about 15 minutes. 

Remove heat and set aside to cool off. In a large mixing bowl combine I cup shredded carrots, 1/4 cup avocado, 1/4 cup melted vegan butter, 1 cup almond flour, 2 tsp salt, 1 tsp pepper, and 1 tsp onion powder.

Beat these ingredients with electric mixer until thoroughly combined. Then add the cooked quinoa to the mixing bowl and stir with a large spoon. Preheat your oven to 350 degrees F. Line a sheet pan with parchment paper. 

Manually roll the quinoa mixture into 9 patties and flatten on top of the sheet pan. Bake the quinoa patties for 20 minutes. Allow  quinoa avocado veggie patty recipe to rest for about 10 minutes.

Ingredients

  • 1 cup dry quinoa
