Simple Vegan Holiday Cookies

Vegan Christmas cookies recipe is simple and delicious. You can use any shape you prefer, such as trees, stars, Santa, or plain old circles. Vegan holiday cookies are great for any festive time of year. I made some Christmas trees, snow flakes, and even made some “Ho Ho Ho” cookies ha ha. 

This vegan Christmas cookies recipe uses applesauce as an egg replacement. However there are many other options you can use instead. Other egg replacement options include, flax egg, pumpkin purée, or even banana. I try to stay away from bananas however because it always creates a strong taste. 

Vegan Holiday sugar cookies need the following ingredients: vegan butter, granulated sugar, and 1/4 cup brown sugar. You will also need apple sauce (or egg replacer of your choice), vanilla extract, and almond extract. Also all-purpose flour and cornstarch.  

Other ingredients for vegan Christmas cookies recipe include baking powder, baking soda, sea salt, and almond or soy milk. The vegan frosting is super simple, all you need is vegan butter, powdered sugar, and vegan milk. 

Start making the cookies by beating the vegan butter in a large mixing bowl. Combine sugars, extracts, and egg replacement into the bowl- mix again for 1 minute. In a separate bowl combine all dry ingredients (flour, cornstarch, salt, baking soda and baking powder) and whisk

Then sift the dry ingredient mixture over butter/ sugar mixture for the smoothest  vegan Christmas cookies recipe. Mix until thoroughly combined. Then add almond milk and mix until a soft dough is formed. Cover vegan holiday cookies and freeze dough for 15 minutes, or refrigerate for 30-45 minutes.

Ingredients

Cookie Ingredients

  • 1/2 Cup vegan butter
  • 1 Cup Granulated sugar
  • 1/4 Cup Applesauce Or egg replacement of your choice
  • 1 Tsp Vanilla extract
  • 1 3/4 Cup cups all-purpose flour (plus extra for rolling into shapes)
  • 1/2 Tbsp Cornstarch
  • 1 Tsp Baking powder
  • 1/2 Tsp Baking soda
  • 1/2 Tsp Sea salt
  • 2 Tsp vegan milk like soy, almond, coconut

Frosting

  • 1/2 cup vegan butter (room temp)
  • 3 cup powdered sugar
  • 1 Tsp Vegan milk

Instructions

  1. In a large mixing bowl use a mixer to beat the vegan butter

  2. Combine sugars, extracts, and egg replacement into the bowl- mix again for 1 minute

  3. In a separate bowl combine all dry ingredients (flour, cornstarch, salt, baking soda and baking powder) and whisk

  4. then sift the dry ingredient mixture over butter/ sugar mixture.

  5. Mix until thoroughly combined 

  6. Then add almond milk and mix until a soft dough is formed

  7. Cover and freeze dough for 15 minutes, or refrigerate for 30-45 minutes 

  8. preheat your oven to 350 degrees F (176 C)

  9. roll out between two pieces of wax paper, lightly flouring the bottom layer, remove top wax paper, and cut out shapes. (Recipe Tip- freeze shapes ahead of time for 10 minutes before baking.)

  10. Space cookies on a baking sheet 2 inches apart

  11. Bake on the center rack for 12 minutes

  12. Remove from oven and let rest

Frosting

  1. In a separate bowl combine softened vegan butter and vanilla extract and Beat until light and fluffy.

  2. Add powdered sugar 1/2 cup at a time and continue to beat until thick and creamy.

  3. Add 2 tsp vegan milk and beat again

  4. add any colors you prefer

  5. Wait until cookies are fully chilled to frost
