This slow cooker Garlic Artichokes Recipe is the perfect vegan side dish. I’ve always loved artichokes since I was a kid. My mom used to steam them and dip them in butter or mayonnaise. The crock pot artichokes heart is my favorite part.

Artichokes are rich in fiber, vitamins, minerals, and antioxidants. For example they are high in folate and vitamins C and K. Artichokes contain magnesium, phosphorus, potassium, and iron. These healthy nutrients are another reason I love this Slow Cooker Garlic Artichokes recipe.

All you need to make this crock pot artichokes recipe are 6 easy ingredients and a crock pot. I love vegan crock pot recipes. All you have to do is toss the ingredients inside and let it cook itself.

Additionally the slow cooking process really infuses the flavors in these crock pot artichokes. The flavorful ingredients include 2 whole artichokes, 2 cups vegetable broth, and 1/4 cup olive oil.

The remaining flavorful ingredients for crockpot artichokes include 2 tbsp soy sauce, 1 tbsp pepper, 2 tbsp onion powder. When I first made this recipe I didn’t think about the fact that soy sauce is already very salty. So I added 1 tbsp salt. However that was a mistake.

Using soy sauce and salt in the Slow Cooker Garlic Artichokes recipe is way too much saltiness. That’s why you should definitely only pick one or the other and not both. This recipe is so easy to make.

Start making Slow Cooker Garlic Artichokes by turning the crock pot on high heat. Then combine vegetable broth, olive oil, soy sauce, and seasoning inside the crock pot. Stir it together with a whisk.

Next, insert the whole artichokes into the broth, spoon some of the broth over the tops of the artichokes. Put the lid on top of the slow cooker and allow crock pot artichokes to cook for 2 hours minimum. Artichokes make a creative and healthy side dish for any family meal or gathering.
