Before I became vegan I had never heard of tempeh. I had only had tofu before of which I wasn’t the biggest fan ever. However I’ve come to enjoy tofu over the years. It’s grown on me! But tempeh is on another level due to its yummy texture. That’s why I love this Spicy Buffalo Tempeh burrito With additional meal prep instructions.
This tempeh burrito is healthy, vegan, and delicious. Tempeh is one of my favorite plant proteins. It’s made from soybeans and has a meaty taste and texture.
I like to make these spicy tempeh burritos on Sunday night and eat them as lunch meal prep. The prep time for single portion vegan burritos is only 15 minutes. For the meal prep portions it’s 20 minutes.
The Cook time is only 6 minutes to bake the tempeh for a single portion. For the meal prep portion the cook time is 15 minutes. This vegan tempeh burrito recipe is so easy to make.
You only need a few simple Ingredients for these tempeh burritos. The ingredients include 5 whole tortillas whole wheat, 2/3 cup avocado, and 2/3 cup refried beans vegetarian.
You will also need 7.5 oz tempeh or 1 brick, 2 tbsp nutritional yeast, 2 tbsp dried chives, and 2 small tomatoes juicy. I also like to add 1 cup lettuce shredded and 1/2 cup franks redhot buffalo sauce amount doesnt affect calorie count.
First preheat oven to 350 degrees F. Then slice tempeh into medium thin rectangular slices. Next spread tempeh out on baking pan. Then smother in buffalo sauce and add seasoning on top.
I bake the tempeh in the oven for 6-10 minutes. Allow tempeh to cool off to the touch. Then wrap inside tortillas with avocado, lettuce, and tomatoes.
