Spicy Mushroom Black Bean Tacos

The Smokey mushroom flavor will delight you especially when combined with the flavors of the sauté and beans. It’s so easy to make too, only a few minutes in the skillet or pan. 

What ingredients do you need to make the sauté? 2 tbsp olive oil, 1 cup mushrooms, 1/4 cup chopped white onion, and 1 jalapeño – rinsed and chopped. Also 1 tbsp grated ginger, 1 tsp liquid smoke, 1/2 tbsp soy sauce, 2 tbsp orange juice, and 1 tsp paprika. Don’t forget 1 tsp turmeric, 1 tsp black garlic powder, 2 tbsp all purpose flour, and 1/2 cup vegetable broth.

How do you store the leftovers for these tacos with sautéed mushrooms? It’s best to store the beans and mushroom mixture separately than the tortillas so the tortillas don’t get soggy! Store it in a seal tight container like Tupperware with a lid. Sometimes when I do t have any containers available I just use plastic wrap around a mixing bowl. Then simply reheat the mushroom and bean filling in a skillet for 10 minutes, in the microwave for 3 minutes, or the oven for 15 minutes!

Ingredients

  • 1/4 cup onions chopped
  • 1 average jalapeño rinsed and chopped
  • 1 tbsp grated ginger
  • 1 tsp liquid smoke

  5. Slowly pour in the vegetable broth and stir, put the lid on for 3 minutes and remove heat 

  6. Heat your canned black beans however you please 

  7. Fry your tortillas if you want, stuff the tacos with sautéed mushroom mixture and beans!
