Spicy Mushroom Black Bean Tacos

Recipes with sautéed mushrooms like these vegan tacos are out of this world flavorful. If you love vegan food like tacos and black beans then you need to try this dish. The Smokey mushroom flavor will delight you especially when combined with the flavors of the sauté and beans. It’s so easy to make too, only a few minutes in the skillet or pan. 

What ingredients do you need to make the sauté? 2 tbsp olive oil, 1 cup mushrooms, 1/4 cup chopped white onion, and 1 jalapeño – rinsed and chopped. Also 1 tbsp grated ginger, 1 tsp liquid smoke, 1/2 tbsp soy sauce, 2 tbsp orange juice, and 1 tsp paprika. Don’t forget 1 tsp turmeric, 1 tsp black garlic powder, 2 tbsp all purpose flour, and 1/2 cup vegetable broth.

Recipes with sautéed mushrooms like these vegan tacos also need flour tortillas and black beans! A little guacamole never hurt a vegan taco either. 

How to cut an onion without your eyes burning? 

Did you know that the chemical in onions that cause your eyes to burn is attracted to moisture and not necessarily your eyeballs? If you place a wet rag right next to the onion as you chop your eyes will avoid most of the chemicals. This tip absolutely changed my life! 

Thinly dice your onions

Recipes with sautéed mushrooms like these tacos also use jalapeños in the sauté. Once you chop your herbs combine them with the mushrooms and add the grated ginger, 1 tsp liquid smoke, 1/2 tbsp soy sauce, 2 tbsp orange juice and let them marinate. It really brings out the flavors.

Heat the oil before tossing in mushroom mixture and add the orange juice, all the seasoning, and the flour and stir.Slowly pour in the vegetable broth and stir Put the lid on for 3 minutes and remove heat. Heat your canned black beans however you like. Fry your tortillas if you want that extra crispness. Stuff the tacos with sautéed mushroom mixture and beans!

How do you store the leftovers for these tacos with sautéed mushrooms? It’s best to store the beans and mushroom mixture separately than the tortillas so the tortillas don’t get soggy! Store it in a seal tight container like Tupperware with a lid. Sometimes when I do t have any containers available I just use plastic wrap around a mixing bowl. Then simply reheat the mushroom and bean filling in a skillet for 10 minutes, in the microwave for 3 minutes, or the oven for 15 minutes!

Ingredients

  • 2 tbsp olive oil
  • 1 cup Mushrooms sliced
  • 1/4 cup onions chopped
  • 1 average jalapeño rinsed and chopped
  • 1 tbsp grated ginger
  • 1 tsp liquid smoke
  • 1/2 tbsp soy sauce
  • 2 tbsp Orange juice
  • 1 tsp paprika
  • 1 tsp Turmeric
  • 1 tsp black garlic powder
  • 2 tbsp all purpose flour
  • 1/2 cup Vegetable broth
  • 1 cup black beans
  • 12 mini Flour tortillas

Instructions

  1. Chop the onions and jalapeño 

  2. Add them into a mixing bowl with the mushrooms and ginger 

  3. Marinate with liquid smoke, soy sauce, and some juice from the jar of ginger if you have it 

  4. Heat the oil before tossing in mushroom mixture and add the orange juice, all the seasoning, and the flour and stir 

  5. Slowly pour in the vegetable broth and stir, put the lid on for 3 minutes and remove heat 

  6. Heat your canned black beans however you please 

  7. Fry your tortillas if you want, stuff the tacos with sautéed mushroom mixture and beans!
