I was doing research on nuts and seeds looking for ideas on vegan cheeses. It was time for a new recipe idea. I wanted to make a vegan pistachio cheese recipe. So spicy pistachio cheese ball recipe was born! 

I love making vegan cheeses with cashews but I’ve done it a million times. I wondered can you soak pistachios? It turns out yes you can! So it was easy to make this vegan cheese recipe.

This vegan cheese ball recipe with pistachios spreads easily on bread or crackers. It’s creamy and a little spicy. Raw vegan pistachio cheese recipe is easy to make. You only need a few ingredients.

This vegan pistachio cheese recipe is simple

Pistachio Cheese Ball

The vegan pistachio cheese recipe ingredients include pistachios, Apple cider vinegar, and dried rosemary. Also black garlic, cayenne pepper, and salt. You will also need water to soak the pistachios.

This nut cheese ball is vegan, plant based, paleo, and gluten free. It’s also a raw food because you don’t cook anything!

Start by soaking the shelled pistachio nuts over night. Then drain them but keep the water Incase you need to add a little back in. In a blender or food processor Blend the pistachios.

Add the remaining ingredients to the vegan cheese ball recipe and blend again until thoroughly combined. This is when you may want to add a splash or two of the water back in. You want it to be a thick paste.

Use your hands to manually mold this pistachio mixture into a ball. Place into a container and cover with plastic wrap. Store the vegan cheese ball in the refrigerator for a few hours.

Ingredients

  • 1 Cup Pistachios Dry, shelled, unsalted
  • 1 Cup Water
  • 1 Tbsp Apple cider vinegar
  • 2 Tsp Salt
  • 1/2 Tbsp Black garlic seasoning powder
  • 1/2 Tbsp Dried rosemary
  • 1/2 Tbsp Cayenne pepper

Instructions

  1. Soak pistachios in water for at least 8 hours at room temperature. 
  2. Drain pistachios from water and blend into paste
  3. Add Apple cider vinegar and spices. Blend some more until thoroughly combined.
  4. Use your hands to knead and roll into a ball.

  5. Cover with plastic wrap and let chill in fridge for a few hours.
