I wasn’t sure what exactly to title this vegan recipe. Are they veggie puffs, fritters, meatballs? Either way they made great use of my ripe avocados and added a healthy plant based item to my salad. I also ate some as a vegan quinoa burger recipe with whole wheat tortillas.
This recipe with quinoa combines avocado and spinach for its beautiful color. The avocado plus vegan egg replacement helps bind the “meatball” together. You can even make them more flat before baking and create a veggie patty/fritter shape.
All you need to make vegan quinoa burger recipe is a few simple ingredients. Ingredients for this recipe include 1 cup quinoa, 2 cups water and 3 cups spinach. You will also need 1 large avocado 1 tbsp Bobs Red Mill Egg Replacer or 1 flax egg.
Flax eggs are perfect for recipe with quinoa. All you have to do is mix one tablespoon ground flaxseed meal with three tablespoons of water. Mix together, and let sit in your fridge for 15- 30 minutes to set up and thicken).

Recipe tip – you can use any egg replacement for these quinoa balls. If you leave it out all together the recipe will still work, just be a bit harder to hold together. Bobs Red Mill Egg Replacement is a great option as well.
You could also try adding 2 tbsp vegetable oil as a binding agent.
