It is summer 2019 so I’m having fun making Low sugar Vegan recipes! It’s so easy to make dairy free desserts like this keto vegan cheesecake. This Vegan Strawberry Cream Pie Recipe is delicious. I love no bake coconut cream pie recipes.

There are many ways to make vegan cream pie and I had fun thinking of a new recipe. This vegan strawberry cream pie recipe contains no dairy or eggs! Try out this keto vegan cheesecake I know you’ll love it.

This Keto vegan cheesecake cream pie would also pass as a vegan cheesecake. In fact I’ve added it to my list of vegan cheesecakes. This no bake coconut cream pie is delicious.

This vegan strawberry cream pie recipe contains canned coconut milk. It is important to get the cream to separate from the clear liquid. Therefore you need to chill the can for a few hours before opening.

Preferably over night. Then scoop the coconut cream out with a spoon. It will be the thick white top portion. This coconut cream is important for thick vegan strawberry cream pie recipes. Coconut cream is low in carbs making it perfect for keto vegan cheesecake recipes.

Canned coconut milk is the thickest form of coconut milk. It’s more like cream. Coconut milk in the carton is too watery to really make milkshakes or creamy desserts. You need only the cream for no bake coconut cream pie.

It is made from the actual meat of the coconut. Canned coconut milk contains about 4 grams of carbs for the entire can. That’s why it is perfect for low carb Keto vegan strawberry cream pie recipes

Vegan Strawberry Cream Pie

Canned coconut milk contains about 4 grams of carbohydrates for the entire 13.5 oz can. It’s perfect for low carb vegan desserts like this Strawberry Cream Pie Recipe.

There are many Egg Replacer options available however I prefer Bobs Red Mill Egg Replacer. It is a mixture of Whole Soy FlourWheat GlutenCorn Syrup Solids, Algin.

Add one tablespoon Egg Replacer to three tablespoons water for each one whole egg in any recipe. For this low carb vegan strawberry cream pie this ingredient adds thickness to the cake portion.

It binds The Crust together as well. Furthermore Bobs Red Mill Egg Replacer has only 3 carbohydrates per tbsp.

Stevia is great for low sugar and low carb recipes. If you’re not interested in a low carb recipe simple replace the stevia with real sugar. 1 tsp stevia is equivalent to 1 cup granulated sugar. You can use your favorite sweetener for this vegan strawberry cream pie recipe.

Doing this won’t drastically change the texture of your vegan strawberry cream pie. In fact it will thicken it up some.

Ingredients

For The Crust

  • 1.5 cup almond flour
  • 3/4 cup vegan butter or coconut oil
  • 2 tbsp bobs Red Mill Egg Replacer Or similar low carb wheat gluten binder (could be left out if necessary)
  • 1/2 tsp stevia

For The Pie

  • 2 13.5 oz can coconut milk full fat
  • 2 cups fresh strawberries sliced
  • 1 tsp orange extract or vanilla if you prefer
  • 1 tsp stevia
  • 2 tbsp bobs red mill Egg Replacer Or similar low carb wheat gluten binder (could be left out if necessary)

Instructions

For The Crust

  1. Inside your cake pan combine all crust ingredients and whisk together. 

  2. Use your hands and fingers to mold into Crust 

  3. Store in freezer for 1 hour

For The Pie

  1. Refrigerate your canned coconut milk, large mixing bowl, and beater sticks overnight before hand

  2. The coconut cream will separate from the clear liquid once refrigerated scoop the cream out and discard the clear liquid

  3. Combine coconut cream, orange extract, stevia, and Egg Replacer in large mixing bowl and blend on high until thoroughly combined 

  4. Add strawberries and fold into cream with a large spoon until thoroughly dispersed

  5. Scoop it on top of crust and return to freezer

  6. Allow to freeze for approximately 2-3 hours so your pie is firm but not frozen solid
