My strawberry vegan cake worked out so well I decided to make a similar one with a different fruit! This recipe for blueberry cake is fun and delicious. Furthermore it adds a beautiful blue color. That’s why I love this Vegan Blueberry Cake Recipe.

Blueberries are a powerful antioxidant. Anthocyanin is a type of flavonoid. Flavonoids are naturally occurring plant pigments. The many benefits of flavonoids include reduced risk of cancer, heart disease, asthma, and stroke.

Antioxidants reduce DNA Damage, Which May Help Protect Against Aging and Cancer, and boost immunity. Antioxidants increase energy levels, decrease inflammation, improve metabolism. I love this vegan blueberry cake.

This cake is so easy to make

Ingredients for this vegan cake include 4 tbsp bobs red mill egg replacer, 3 tbsp agar agar powder, and 3 cups cake flour. You will also need 2 cups sugar, 1 tsp baking powder, and 1/2 tbsp sea salt.

Other vegan cake ingredients include 1 cup soy milk, 1 cup butter flavored vegetable shortening, 1 cup water, 1 cup blueberries, and 2 tbsp vanilla extract.

The directions for vegan blueberry cake recipe are super simple. First Preheat your oven to 350. Then Combine all dry ingredients in large mixing bowl. Whisk together the dry ingredients until thoroughly blended.

In separate large mixing bowl add the shortening, vanilla extract, and blueberries. Blend until shortening is thoroughly blended into blueberries. Add soy milk, blend. Add water and blend. Then Bake the vegan cake for 30 minutes.
