The way banana mango and pineapple freeze make a beautiful texture for things like vegan ice cream and sherbet. The texture is perfect for blending with ingredients like like agave syrup or almond milk. Sometimes I even use an ice cream maker and ingredients like full fat coconut milk to blend the perfect texture of cream that is frozen with berries or peanut butter.

When I was a little girl my grandmother took me up to her garden and we picked fresh strawberries and raspberries. I hope her wash and rinse all the bugs and debris out and then we froze them overnight. The next afternoon we took the frozen berries out of the freezer and blended them in her blender with milk.
