Mushrooms belong to the fungi kingdom. They contribute to healthy skin and hair, energy, and weight. Mushrooms are high in antioxidants which have disease prevention qualities. Furthermore mushrooms contains selenium. Selenium helps detox the body by cleansing the liver. It has cancer prevention qualities and can decrease the size of tumors.
I love baking mushrooms because it creates a dry texture. Masking the mushrooms more crunchy rather than chewy. Mushrooms are a healthy low calorie vegetable.
You will need 9 total ingredients for making this vegan tempeh mushroom taco meat. Ingredients are one brick tempeh, 2 cup mushrooms, and 1 tbsp olive oil. For seasoning and flavor you will need 3 tbsp sriracha, 1/2 tbsp onion powder, and 1/2 tbsp salt. Also 1/2 tbsp paprika, 1/2 tbsp cayenne pepper, and 1/2 tbsp nutritional yeast.
Nutritional yeast is one of my all time favorite vegan seasonings. It tastes like nutty cheese. It’s also most likely fortified with an abundance of vitamins and nutrients. Including vitamin B-12. Although all nutritional yeast contains B vitamins, obviously fortified yeast contains the most. I always use the fortified brands as it helps my nutrition intake.
Fortified nutritional yeast is a complete protein. It contains all 9 amino acids the human body needs to function healthily. Fortified yeast is abundant in thiamine, riboflavin, niacin, vitamin B6 and vitamin B12.
This spicy recipe is vegan, gluten free, and paleo. It’s also low carb and Keto. Start by Preheating the oven to 350 degrees F. Next Line a baking pan with foil. Then Manually break up the tempeh into chunks over foil. Combine chopped mushrooms with tempeh. Your vegan recipe for mushroom tacos is almost done.
Use your hands to mix plant based taco meat together. Add olive oil and seasoning and toss/mix up again with your hands. Spread out evenly across foil sheeted baking pan. Bake for 12-15 minutes!
Just scoop this vegetarian taco meat into your favorite taco shell or tortilla. Top with shredded lettuce, tomatoes, and avocado. There are also various vegan cheeses including sour creams to add as well! Tempeh is my favorite go to vegan protein meat replacer!

Manually break up the tempeh brick into chunks over foil
Combine mushrooms with tempeh and use your hands to mix together
Add olive oil, sriracha, and seasoning and toss/mix up again with your hands

Bake for 12-15 minutes
