However they looked too plain in the pictures. That’s why I decided to whip up some easy vegan vanilla topping. Vegan vanilla cookies with cream cheese are so simple to make. These cookies are Keto friendly also.

Vanilla Vegan Cheesecake Cookies Recipe

Dairy free vanilla cheesecake cookies recipe only require 6 simple ingredients. The vegan ingredients include 1 cup almond flour, 1/4 cup almond butter, and 1/4 cup vegan cream cheese. Also 1 tbsp stevia and 1 tsp vanilla extract.

The directions for vegan cream cheese cookies are easy as well. First Preheat oven to 350 degrees F. Then, in a large mixing bowl combine almond flour and stevia and whisk. Next add vanilla extract and almond butter.

Then beat your Keto Friendly cookie batter with electric mixer until thoroughly combined. Lastly add vegan cream cheese and beat again cookie dough until thoroughly combined. Line a large baking pan with parchment paper.

Separate vanilla vegan cheesecake cookie dough into 9 separate portions and roll each portion into a ball. Spread out vegan vanilla cookie dough balls on the baking pan. Space the cookies out so none are touching each other.

Use a fork or your hand to flatten each cookie ball into a cookie shape. Bake vegan cream cheese cookies in the oven for 10 minutes. Allow cookies to rest for another 10 minutes before frosting vanilla vegan cream cheese cookies!

The vanilla cheesecake topping is very easy as well.

Ingredients include 8 oz vegan cream cheese, 1/4 cup coconut milk (full fat from the can), 1 tbsp stevia, and 1 tsp vanilla extract.

To make the cookie topping just combine stevia, vegan cream cheese, and vanilla extract in a large mixing bowl. Then beat with electric mixer until thoroughly combined.

Next add the full fat coconut milk and beat again with electric mixer until thoroughly combined. Store the cream topping in the refrigerator until ready to frost the gluten free vegan vanilla cookies.
