Vegan Butterfinger No Bake Cookie Cake Recipe is so easy and fun. This vegan dessert is actually quite healthy as well. In fact it’s low in sugar, high in protein, and nutrients.

Peanut Butter Captain Crunch cereal is actually completely vegan. It doesn’t even contain palm oil! Regular captain crunch is technically vegan as well, but it does contain palm oil. It’s a fun ingredient in this vegan cookie cake recipe.

I’m thrilled to see my kids eat this vegan cereal bar cake recipe. Cereal is always fortified with a variety of vitamins and minerals. Almond butter is rich in plant protein and vitamins as well.

The combination of flavors taste just like a butterfinger candy bar also! It’s a great healthy vegan snack or dessert. This recipe requires no baking nor added sugar.

This fudge like vegan cookie cake recipe is so easy

You only need 4 simple ingredients to make this vegan chocolate cookie cake recipe. Ingredients include 2 cups peanut butter captain crunch blended into “flour.” Also 1 cup almond butter and 1 cup dairy free unsweetened dark chocolate chips for baking.

I also like to add 2 tbsp stevia to add sweetness to the unsweetened chocolate chips and almond butter. However it’s optional. These vegan cookie cake recipe instructions are very easy also.

First Use a food processor to grind up the captain crunch cereal (3 cups cereal = 2 cups blended into “flour”). Then Melt dairy free unsweetened chocolate chips in the microwave.

Next, In a separate mixing bowl combine melted chocolate with almond butter and stir with a large spoon until thoroughly combined. Then Add ground up caption crunch to mixing bowl with almond butter chocolate cookie dough mixture.

Use the same large spoon to stir vigorously until thoroughly combined. Then Line a cake pan with parchment paper. Next Pour butterfinger cookie cake batter into the cake pan and smooth.

Store Butterfinger fudge recipe in the refrigerator until it hardens. That will probably take about an hour. This recipe makes about 16 vegan fudge cake squares. Captain Crunch is my favorite vegan cereal. I love eating it in a bowl with soy milk and incorporating it in vegan desserts.
