Vegan Chocolate Chip Cookies Recipe
These vegan chocolate chips cookies are absolutely scrumptious! Additionally they’re gluten free and plant based. It only takes a few simple everyday ingredients to make dairy free chocolate chip cookies.
It’s actually quite simple to make a recipe for vegan cookies. You don’t need any special binding ingredient either. When I first went vegan I went all out with the vegan egg replacement powders.
However I soon learned all the simple everyday ingredients you can use to make vegan chocolate chips cookies. Furthermore you can use these same type of ingredients to make any kind of vegan cookie recipe.
Simple egg replacement ingredients for baking include butter butters such as peanut, cashew, and almond. Also bananas, sweet potatoes, and apple sauce. For this recipe for vegan chocolate chip cookies I’m using banana and cashew butter.
You only need a few simple ingredients to make these vegan chocolate chips cookies. The ingredients include 1 cup almond flour, 1/2 cup cashew butter (or peanut butter). Also 1/2 banana, 2 tbsp almond milk, and 3/4 cup dairy free dark chocolate chips.
Other ingredients for these gluten free vegan cookies include 1 tsp vanilla extract, 1 tsp stevia or sweetener of your choice. The directions are so easy to follow as well. First preheat oven to 350 degrees F.
Next, in a large mixing bowl combine almond flour, cashew butter, banana, almond milk, and vanilla extract. Use an electric mixer to beat the vegan chocolate chips cookie dough until thoroughly combined.
Then add the dairy free dark chocolate chips to the dough and use a large spoon to mix and fold until chocolate chips are evenly distributed. Grease a large sheet pan or baking sheet or line with parchment paper. Roll the vegan chocolate chip cookie dough into 9 separate balls.
Then spread them out evenly across the baking sheet. Use a fork or your hand to flatten the cookie dough balls. Bake cookies for 10 to 12 minutes.

Other egg replacements that have worked for me includes sweet potato, agar powder, and sugar free pudding mix.
