Vegan Maple Pancake Donut Recipe

Vegan Maple Pancake Donut Recipe

Vegan maple pancake donut recipe was randomly invented one morning. We had this huge bag of vegan pancake mix that I hadn’t used in a while. I thought, wouldn’t it be fun to make maple donuts with pancake mix? So I started to work on a recipe for baked donuts using pancake mix and maple syrup!

The great thing about vegan donuts with pancake mix is that the pancake mix already has a lot of the necessary ingredients. For example, baking soda and a binding agent.

Vegan brands of pancake mix include Bisquick Original Pancake & Baking Mix, Aunt Jemima Original Pancake & Waffle Mix, or Hungry Jack Complete Chocolate Chip Pancake Mix.

You only need 5 simple ingredients to make this recipe for baked donuts. All you need is 2 cups pancake mix, 1/2 of a large banana, and 1 cup vegan milk. Also 1/4 cup maple syrup and 1 tsp vanilla extract. For the maple donuts glaze you need 1/4 cup vegan butter (melted) and 1/2 cup brown sugar.

You also need 3 tbsp vegan milk (such as soy, almond, coconut), 2 tbsp maple syrup, and 2 cups powdered sugar for the glaze. The directions for the donuts with pancake mix are so easy as well. In a large mixing bowl combine all ingredients and blend with hand held mixer until thoroughly combined.

This recipe for baked doughnuts is so easy

Next, preheat the oven to 350 degrees F. Then grease 2 (6 count) donut pans. Pour vegan donuts with pancake mix batter into donut compartments in the donut pan (fill them 1/2 way full). Bake maple donuts for 8 minutes only.

Directions for the vegan maple glaze is very simple as well. Melt butter in microwave safe bowl for 30 seconds. Add the remaining glaze ingredients into melted butter mixing bowl and whisk vigorously until thoroughly combined.

The glaze will thicken as the butter cools off. Let the donuts cool off before filling the tips into the glaze. This vegan baked pancake donut recipe is so simple to make. It’s very delicious as well. The maple glaze is to sticky and delicious.

You can easily use gluten free pancake mix.
