Zucchini noodles, also known as “zoodles” are a tasty way to get your pasta craving fixed without the gluten or carbs. These vegan recipes all use zucchini noodles for a healthy and tasty meal that won’t leave you feeling too full.
Sometimes, I like to mix my zucchini noodles along with gluten-free spaghetti or other pasta. This bulks up the dish and makes it more satisfying. You can also used spiralized carrots or parsnips instead of zucchini.
