Zucchini noodles, also known as “zoodles” are a tasty way to get your pasta craving fixed without the gluten or carbs. These vegan recipes all use zucchini noodles for a healthy and tasty meal that won’t leave you feeling too full.

Sometimes, I like to mix my zucchini noodles along with gluten-free spaghetti or other pasta. This bulks up the dish and makes it more satisfying. You can also used spiralized carrots or parsnips instead of zucchini.

I have found that parsnips result in a really great texture, especially when mixed with other veggies or noodles. Get creative with whatever base you decide to use! The flavor is typically in the sauce and added ingredients.

While you can always make zucchini noodles with a standard veggie peeler, it’s a lot easier to use a purpose-built spiralizer. Here are some of the best options available today.

  • 7-Blade Veggie Slicer and Spiralizer – If you want more options for shapes and sizes, check out this 7-blade spiralizer. It’s a manual spiralizer, but it’s more heavy-duty than the held Veggetti option.
  • Bella Electric Spiralizer – If you’re looking for an electric spiralizer, this is the best option. I use this spiralizer for all my veggie noodles, but I do make a lot of veggie pasta! It can take awhile to clean so prefer to make my noodles in batches to save time.
  • KitchenAid/Bestand Spiralizer Attachment – If you have a KitchenAid mixer, you may want to look into a spiralizer attachment! There are a lot of attachment options available, and this one is perfect for making zoodles.
