Vegan S’mores Bars (With A Sneaky Healthy Ingredient)

S’mores have always been one of my favorite desserts. This campfire treat reimagined into brownie form is perfect for any occasion.

These s’mores brownies are easy to make by using brownie box mix. While I love baking from scratch, there is no shame is using a box mix when you’re short on time or seeking simplicity. And, you can make any brownie box mix vegan with my super-secret and sneaky healthy trick!

How to make vegan s’mores brownies

What you’ll need:

  • 13 full size graham cracker sheets
  • 6 Tbsp. vegan butter
  • 2 Tbsp. sugar
  • 1 box brownie mix (any brand or kind)
  • 1 can black beans (NOT drained or rinsed)
  • Vegan mini marshmallows (Dandies brand is vegan)

Preheat oven to 350 degrees F. Line a 9×9 baking pan with parchment paper, leaving a bit of excess hanging over the edges for easy removal.

Add graham crackers to a food processor and mix till fine crumbs are formed. Then, add in sugar and slowly pour in melted butter. Mix till crumbs are coated in butter. This is your crust.

Place crumbs in the baking dish and firmly press down into a compact layer. Bake for 15 minutes.

Meanwhile, make the brownie batter. Blend one can of black beans (water and all, do NOT drain them) in a high powered blender till smooth. Then, mix the brownie box mix with the bean puree.

Once the crust has cooked, remove from the oven and pour the brownie batter on top – using a spatula to even it out. Bake for 35-30 minutes, or until a fork comes out clean. Remove from oven.

Set the oven to broil. Place a layer of marshmallows on top and toast for 30 seconds to 1 minute. Watch them carefully so they do not burn.

Allow the bars to cool at room temperature for at least 30 minutes, and then chill in the refrigerator for another 30 minutes before cutting.

Recipe notes and tips

  • Be sure to allow the bars to cool completely before cutting them. This is important to help them stay together.
  • If you have a vegan brownie box mix you like, you can skip the black beans and follow the instructions on the box. The black bean trick is simply to “veganize” brownie mix that typically calls for eggs.
  • You can experiment with different crusts. Graham crackers have classic s’mores flavor, but you can also crush up your favorite cookies and mix up the brownies that way.

Ingredients

Graham Cracker Crust

  • 1 can black beans (NOT rinsed or drained)

Additional Ingredients:

  • 2- 3 cups mini marshmallows
