Stuffed acorn squash is really quit delicious with lovely flavors. Acorn squash is a winter squash packed with vitamins and minerals. It’s rich in protein, potassium, and fiber. Also vitamin A, vitamin C, calcium, and iron.
Vegan stuffed squash is super simple to make all you need is a few common ingredients. The exact ingredients you will need include 2 medium acorn squashes, 2 cups croutons (plain), and 4 tbsp vegetable oil. Also 1 cup vegetable broth, 1/4 cup pumpkin seeds, and 1/2 tbsp salt.
I love cooking vegan dishes with pumpkin seeds which are also called North American pepitas. They are packed with protein, fiber are other nutrients. For example they are rich in niacin, iron, and magnesium. Also manganese and phosphorus! They add a lovely little crunch to this vegan stuffed squash.
Other ingredients for stuffed acorn squash include 1/2 tbsp nutmeg, 1 tbsp brown sugar, 1/2 tbsp onion powder, 1 tsp cinnamon, and 1 tsp black pepper. These flavors and seasonings are amazing with this vegan dish.
Prep the acorn squash by cutting them in half and removing the guts and seeds. Then preheat your oven to 400 degrees F. Combine the dry ingredients or seasonings in a small mixing bowl and whisk them together.
Fill the acorn squash with the croutons, oil, vegetable broth, seasonings, and seeds. Then arrange them properly on a baking sheet or pan and place them on the oven rack. Bake them for an hour then allow them to rest for 20 or 30 minutes! Check out the full and detailed recipe below.

Cut the acorn squashes in half and remove seeds and guts
Preheat your oven to 400 degrees F
Combine salt, nutmeg, brown sugar, onion powder, cinnamon, and black pepper in a small mixing bowl and whisk thoroughly
Fill each acorn squash up with 1/2 cup croutons
Drizzle each with 1 tbsp vegetable oil
Pour 1/4 cup vegetable broth in each acorn squash as well
Then sprinkle the tops of each acorn squash with the seasoning mixture
Add some pumpkin seeds or nuts of your choice to the tops of each squash as well
Place the acorn squash (facing up) on a large baking sheet and roast until for 55 to 60 minutes
