In a small bowl, combine dry ingredients (all purpose flour, sugar, salt and baking powder). Stir to combine.

​Next, add the wet ingredients. Stir in almond milk, vegetable oil and vanilla. Whisk till smooth, making sure to scrape the sides so all dry ingredients are well incorporated.

Pour into an ungreased microwave-safe mug.

Microwave on high power for 90 seconds to 2 minutes. Microwave times can vary quite a bit. You may need up to 2 ½ minutes until the edges are no longer batter.

Allow cake to cool for at least 5 minutes before eating.
