This cookie recipe is easy, delicious, and gluten free.
Preheat oven to 350 degrees F
In a large mixing bowl combine almond flour and stevia and whisk
Then add vanilla extract and almond butter and beat with electric mixer until thoroughly combined
Lastly add vegan cream cheese and beat again until thoroughly combined
Line a large baking pan with parchment paper
Separate vegan cheesecake cookie dough into 9-12 separate portions and roll each portion into a ball
Spread out vegan vanilla cookie dough balls on the baking pan. Space them out so none are touching each other.
Use a fork or your hand to flatten each cookie ball into a cookie shape
Bake in the oven for 10 minutes
Allow them to rest for another 10 minutes before frosting vanilla vegan cream cheese cookies!
