Vanilla Vegan Cheesecake Cookies Recipe

For The Cheesecake Cookies

  • 1 cup almond flour
  • 2 tbsp stevia
  • 1 tsp vanilla extract
  • cup almond butter
  • cup vegan cream cheese

For The Cookie Frosting

  • 8 oz vegan cream cheese
  • ¼ cup coconut milk full fat from the can
  • 1 tbsp stevia


For The Cookies

  1. Preheat oven to 350 degrees F 

  2. In a large mixing bowl combine almond flour and stevia and whisk

  3. Then add vanilla extract and almond butter and beat with electric mixer until thoroughly combined 

  4. Lastly add vegan cream cheese and beat again until thoroughly combined 

  5. Line a large baking pan with parchment paper 

  6. Separate vegan cheesecake cookie dough into 9-12 separate portions and roll each portion into a ball

  7. Spread out vegan vanilla cookie dough balls on the baking pan. Space them out so none are touching each other.

  8. Use a fork or your hand to flatten each cookie ball into a cookie shape

  9. Bake in the oven for 10 minutes 

  10. Allow them to rest for another 10 minutes before frosting vanilla vegan cream cheese cookies!

For The Frosting

  1. Combine stevia, vegan cream cheese, and vanilla extract in a large mixing bowl and beat with electric mixer until thoroughly combined 

  2. Then add the full fat coconut milk and beat again with electric mixer until thoroughly combined
