First make sure you have sufficiently chilled your can of full fat coconut milk. It’s best to put it in the refrigerator the night before. However 4 hours should be long enough if your refrigerator is cold enough.
Once sufficiently chilled the coconut cream will separate from the clear liquid. Scoop the coconut cream from the top of the can. Discard the clear liquid at the bottom.
Put the coconut cream into a large mixing bowl and add the sweetener and beat with an electric mixer until thoroughly combined and fluffy
Add the instant coffee and vanilla extract and beat again with electric mixer until thoroughly combined and fluffy.
