Ingredients

For The Donuts

  • 2 Cups Dry oatmeal
  • 1 Large Banana
  • 2.5 Cups Plant based milk Such as soy milk or almond milk
  • 1 Cup strawberries Sliced
  • ¾ Cup Peanut butter
  • 2 Tbsp Stevia
  • 1 Tsp vanilla extract

For The Chocolate Glaze

  • ¾ Cup Dairy free chocolate chips for baking
  • 2 Tbsp Plant based milk

Instructions

For The Donuts

  1. Use a food processor or blender to blend the oatmeal into flour

  2. Combine the oat flour with the plant based milk in a large mixing bowl and stir with a whisk

  3. Use a food processor or blender to blend strawberries and peanut butter until thoroughly combined 

  4. Add the strawberry peanut butter purée to the large mixing bowl with the oat flour and plant based milk mixture 

  5. Also add the vanilla extract and stevia

  6. Use the whisk to blend this mixture until thoroughly combined 

  7. Cover the mixture with plastic wrap and allow to sit for 30 minutes at room temperature *this gives the oat flour time to absorb the liquid and thicken the batter.

  8. Preheat the oven to 350

  9. Pour the batter into your donut pans. I used 2 Zulay non stick donut pans, 6 count on each pan. 

  10. Bake for 10 minutes only

  11. Allow donuts to chill completely before removing from the pan

For The Chocolate Glaze

  1. Melt the chocolate chips in a medium mixing bowl

  2. Add 2 tbsp plant based milk and whisk until thoroughly combined
