This soup is nutritious and filling
Start by plugging in your crock pot and turning it on high
Chop up two medium potatoes with or without skin
combine potatoes, rice, salt, pepper, onion powder, olive oil, and vegetable broth in the crock pot.
Stir all the ingredients around with a large spoon and put the lid on
Allow to cook for 2 hours, stirring occasionally
Add the corn and allow to continue to cook for about 10 to 15 more minutes
For this recipe you can substitute the brown rice for any kind of rice you prefer. I just enjoy healthy brown rice. Additionally you can skin your potatoes before slicing them up. I just enjoy the potato skin.
