These “rice krispy treats” variation look just like Christmas lights
Start making the recipe for marshmallow treats by combining 10 oz dandies marshmallows, 1/4 cup vegan whites chocolate, and 4 tbsp vegan butter in a large (microwave safe) mixing bowl.
Heat these ingredients in the microwave for 40 seconds at a time and then stir
Repeat this approximately 3 times until the ingredients are completely melted and combined (if you heat it all at once it will burn)
Next add the entire 11.5 oz box of “Oops All Berries” Captain Crunch Cereal to the mixing bowl
Then use a large spoon to mix and fold to evenly distribute the cereal into the melted marshmallow mixture
Pour the cereal mixture into a large cake pan (I used an 11x7x2 rectangular cake pan)
In a small to medium (microwave safe) mixing bowl combine 3/4 cup vegan white chocolate and 3 tbsp vegan blue sprinkles.
Heat this mixture in the microwave for 30 seconds at a time and stir.
Repeat this heating process 2 or 3 times until it’s completely melted.
Immediately pour this icing over the marshmallow krispy treats and then put it in the refrigerator to harden.
Vegan Rainbow Marshmallow Krispy Treats will be ready in 2 hours.

*Where to get vegan white chocolate: The best brands are: Kind David, Oh Nuts!, and Milkless. Additionally Hershey’s has recently come out with a vegan white chocolate as well. Order them online or look at Trader Joes or vegan grocery stores.
