Flourless Chocolate Chips Cookies

These cookies are so healthy and delicious. They make a great meal prep snack as well.

Ingredients

  • 1 Cup Quick oats oatmeal
  • 2 Cups Cooked sweet potato

    (1 very large sweet potato or 2 medium/large sweet potato will be enough to equal 2 cups cooked sweet potato)

  • 1 tsp Vanilla extract Optional
  • ½ Tbsp Stevia Optional
  • 1 Cups chocolate chips for baking Dairy free sugar free

Instructions

  1. Start by peeling and boiling your sweet potatoes until thoroughly cooked (1 very large sweet potato or 2 medium/large sweet potato will be enough to equal 2 cups cooked sweet potato)

  2. Drain the sweet potatoes from the water and allow to cool off enough to touch 

  3. Then add oatmeal to the food processor and chop into “flour” (doesn’t have to be perfect flour)

  4. Add the cooked sweet potatoes, stevia, and vanilla extract to the food processor and blend until thoroughly combined 

  5. Move the cookie dough into a large mixing bowl and add the chocolate chips

  6. Mix and fold the chocolate chips into the cookie dough until thoroughly dispersed.

  7. Preheat the oven to 325 degrees F 

  8. Line a large baking sheet with parchment paper or grease it

  9. Divide cookie dough into 12 cookies

  10. Bake for 20 minutes 

  11. Allow to chill in the refrigerator for 20 minutes
