Quinoa Sushi Rolls

  • ¼ Cup Quinoa Dry
  • ½ Cup Water For cooking the quinoa
  • 1 Tbsp Wasabi
  • 2 Tbsp Rice vinegar
  • 1 Medium Carrot
  • 1 Small Cucumber
  • ¼ Cup Avocado
  • 2 Full sized Seaweed nori sheets


  1. Bring 1/2 cup water to a boil then reduce heat to medium/high

  2. Add the quinoa to the water and cook for 12 minutes 

  3. Make sure to stir with a large spoon every 5 minutes or so 

  4. Remove heat and set aside

  5. In a medium mixing bowl combine wasabi and rice vinegar and whisk until thoroughly combined

  6. Add the cooked quinoa to the wasabi mixture and mix with a large spoon until thoroughly combined 

  7. Cut the carrot and cucumber into 4 sections each vertically

  8. Lay down a sheet of seaweed vertically on a sushi mat or hand towel

  9. For the hand towel, fold it in half lengthwise and over it with plastic wrap

  10. Use half the quinoa to fill one roll

  11. Make a flat layer of quinoa on the seaweed like a sheet over a mattress

  12. If you want the quinoa on the outside, flip the seaweed over at this point

  13. Put half the portion of carrots, cucumber, and avocado on the closest edge of the seaweed to you

  14. then roll it up using the towel to guide the process

  15. This is how it looks with the quinoa on the inside
