  • 2 Cups Pancake mix

    vegan brand such as Bisquick Original Pancake & Baking Mix, Aunt Jemima Original Pancake & Waffle Mix, or Hungry Jack Complete Chocolate Chip Pancake Mix

  • 1 Cup Plant based milk such as soy or almond
  • ½ Medium soft banana
  • 1 tsp Vanilla extract
  • 1 Cup Fresh blueberries


  1. In a large mixing bowl combine pancake mix, plant based milk, 1/2 banana and vanilla extract and blend with hand held mixer until thoroughly combined 

  2. Add 1 cup fresh blueberries and fold with large mixing spoon until blueberries are evenly distributed.

  3. Preheat the oven to 350 degrees F 

  4. Grease 1 (24 count) mini muffin pans (regular muffin pan 12 count)

  5. Pour donut batter into donut compartments in the donut pan (fill them 3/4 way full)

  6. Bake for 8 minutes
