  • 1 cup dry quinoa
  • 2 Cups water for cooking the quinoa
  • 1 cups shredded/chopped carrots
  • ¼ cup avocado
  • 1 cup almond flour
  • ¼ cup melted vegan butter or vegetable broth
  • 2 tsp salt
  • 1 tsp pepper
  • 1 tsp onion powder


  1. Start by cooking the quinoa in the water. Use a medium to large cooking pot - Bring to a boil, then lower heat and simmer, uncovered for about 15 minutes 

  2. Remove heat and set aside to cool off

  3. In a large mixing bowl combine I cup shredded carrots, 1/4 cup avocado, 1/4 cup melted vegan butter, 1 cup almond flour, 2 tsp salt, 1 tsp pepper, and 1 tsp onion powder

  4. Beat these ingredients with electric mixer until thoroughly combined

  5. Then add the cooked quinoa to the mixing bowl and stir with a large spoon 

  6. Preheat your oven to 350 degrees F

  7. Line a sheet pan with parchment paper 

  8. Manually roll the quinoa mixture into 9 patties and flatten on top of the sheet pan

  9. Bake the quinoa patties for 20 minutes
