Ingredients

  • 3 cups Plain oatmeal dry
  • 2 Tsp baking soda
  • 1 Cup dried cranberries or dried fruit of your choice
  • 1 cup dried apricots Or dried fruit of your choice
  • ½ cup brown sugar or sweetener of your choice such as 1 tbsp stevia
  • 1 cup applesauce The applesauce is a vegan egg replacer that is a common pantry item. You can replace this with 3/4 cup peanut butter or 2 bananas. If you do use peanut butter or bananas make sure you mix it sufficiently.
  • 3 cups water

Instructions

  1. Start by combining all ingredients in a large mixing bowl 

  2. Stir the ingredients together and allow it to set for about 20 minutes 

  3. Pour the oatmeal mixture into a cake pan 9X13) 

  4. Preheat the oven to 350 degrees F 

  5. Bake for 30 minutes 

  6. Allow to cool off before cutting into 12 servings
