Ingredients

For The Breaded Sweet Potato Nuggets

  • 1+1/4 cup sweet potato chunks (cut approx 1/2 inch by 1/2 inch)
  • 1/2 cup almond flour
  • 2 Tbsp Coconut flour
  • 1+ 1/2 Tbsp smokehouse maple seasoning (which is a combination of salt, sugar, brown sugar, molasses cane, garlic, onion, paprika, chili powder, orange peel, red bell pepper) 
  • 1/2 Tbsp Black pepper
  • 1/4 Cup coconut milk (full fat, from the can) 
  • 6 whole tortillas

For The Sauce 

  • 1/4 Cup vegan mayonnaise
  • 2 Tbsp yellow mustard
  • 1 Tbsp Agave
  • 1 tsp salt

Instructions

For The Breaded Sweet Potato Nuggets

  1. Peel and cut up 1 medium/large to large sweet potato into approx 1/2 inch by 1/2 inch pieces (measure should equal approx 1 cup sweet potato pieces) 

  2. preheat the oven to 350 degrees F 

  3. In a medium to large mixing bowl combine 1/2 cup almond flour, 2 tbsp coconut flour, and 1+ 1/2 tbsp smokehouse maple seasoning and whisk until thoroughly combined 

  4. In a separate bowl add the coconut milk

  5. Spray a baking pan or sheet pan with non stick cooking spray 

  6. Spray the sweet potato pieces with non stick cooking spray then toss them in the flour/seasoning mix 

  7. Then dip each sweet potato piece in the coconut milk (coat it completely) then back into the flour/seasoning, then place directly on the baking sheet/pan

  8. Bake breaded sweet potato chunks for 30 minutes 

For The Sauce 

  1. Just combine all ingredients in a small mixing bowl and whisk together vigorously 

  2. Evenly distribute the sweet potato nuggets between 6 tortillas

  3. Drizzle with sauce and add your favorite toppings (avocado, lettuce, etc)

Recipe Notes

I like to fry a little cabbage with olive oil and salt and pepper as a topping as well!
