Everything But The Bagel Sweet Potatoes

  • 8 medium/large sweet potatoes
  • 1 Cup shredded carrots
  • 1 Cup purple cauliflower chopped
  • 2.5 Cups black beans canned
  • 2 Tbsp everything but the bagel seasoning
  • 1 tsp sea salt
  • 1/2 tsp nutmeg


  1. In a large mixing bowl combine the cooked black beans, vegetables, and seasoning 

  2. Spray a medium baking pan with non stick cooking spray and add the bean and vegetable mixture into the pan 

  3. Toss until ingredients are evenly mixed together 

  4. Preheat your oven to 350 degrees F 

  5. Thoroughly rinse and dry the sweet potatoes 

  6. Sporadically poke holes into the sweet potatoes 

  7. Line a baking sheet with parchment paper and spray with non stick cooking spray 

  8. Bake the sweet potatoes for 50 minutes in total 

  9. At the 30 minute mark add the baking pan with the beans and vegetables into the oven 

  10. After 50 minutes remove both pans from the oven and allow everything to cool until it’s safe to prepare

  11. Make a large cut inside each sweet potato and top with the beans and vegetables
